"Mark and his team on board is a major step towards making the Dryburgh Abbey Hotel the best destination for food and drink in the Scottish Borders. The Dryburgh's eight course dinner menu captures Mark's unique style of cooking and love for modern Scottish Cuisine. Guests are invited to choose from a wide and varied menu featuring only the best seasonal ingredients, organic where possible, which are carefully sourced from local suppliers. Pan seared red mullet fillet, pickled vegetables, poached hens egg, saffron mayonnaise, petit shoots and Duo of Border Hill lamb, parsley root puree, fine beans, confit beetroot, rosemary jus are among the dishes that can be found on the new menu. The Restaurant maintains a varied wine cellar containing more than 100 international wines.."

Dryburgh Abbey Hotel
The Dryburgh's Tweed Restaurant is a contemporary, welcoming restaurant overlooking the River Tweed and serving some of the best of todays' Scottish cuisine. In January 2009 The Dryburgh was awarded two Rosettes from the AA - a particularly welcome accolade for the team including Head Chef Mark Greenaway who have transformed The Dryburgh and provided the Scottish Borders and Melrose with an outstanding restaurant.
